Strawberry Cup Cake

Perfect cup cakes for valentines day.  A simple recipe for strawberry cup cake with strawberry frosting on top.

Servings: 12 cakes

Ingredients:

For Cupcakes:

  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup fresh strawberries
  •  1/4 cup milk, room temperature
  • 1 egg
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1 cup sugar

For Frosting:

  • 1/2 cup fresh strawberries
  • Salt, a pinch
  • 3 1/2 sugar
  • 1/2 tsp vanilla
  • 1 cup butter

Recipe:

For Cupcakes:

  1. In a food processor, puree strawberries and add milk and vanilla.
  2. Whisk together flour, baking powder, salt in a bowl and set aside.
  3. In another bowl, cream butter. Add sugar, egg and egg whites. Beat until combined. 
  4. Add flour mixture then strawberry mixture alternately. Remember to start and end with dry ingredients. Beat until just combined.
  5. Grease 12 cup cake tins. Preheat oven to 350 degrees.
  6. Divide the mixture into 12 cup cake tins and bake for 15-20 minutes or until golden. Do not forget to check by inserting a toothpick at the center to make sure they are completely done.
  7. Let them cool completely before frosting.

For Frosting:

  1. Beat the butter until creamy.
  2. Now add salt, vanilla, sugar and strawberry puree. Beat until light and fluffy.
  3. Spread frosting on each cup cake.
